We're delighted to welcome our highly talented new Executive Pastry Chef, Stephen Espouy to the Britannia team.
We gave him a very warm welcome – not just because he creates the most beautiful, mouth-watering, delicious desserts, which will undoubtedly need tried and tested by us (yum!) – but because, having worked all over the world, he brings with him a wealth of knowledge, experience and expertise, second to none.
Arriving at Britannia direct from Ritz Carlton Sharq Village & Spa in Qatar, having previously worked in Kuwait, Ireland, Scotland, France and Australia, Stephen crafts intricate desserts and delicacies that are mini works of art!
Working with Britannia’s onboard Galley team, alongside Executive Chef, Mark Alston, he’ll also be mentoring our new trainee baker Victoria Tighe, who used to work in our Royal Deck Tea Room, before joining Britannia’s culinary creators! So far, we have delighted in Victoria’s bakes, including her gorgeous Easter cupcakes (see photos below) but now she is faced with her biggest challenge yet – to create a giant Britannia,in cake for Cake Fest Edinburgh!
As part of The Year of Food and Drink Scotland 2015, Cake Fest Edinburgh will be a fantastic day of free entertainment at The Royal Botanic Garden on Sunday 21 June, where a giant edible cityscape of 50 of Edinburgh’s famous landmarks will be recreated in cake! With the countdown to the big day begun, Victoria has been furiously melting, mixing and moulding icing into, life boats, chains, ropes and funnels to decorate the decks of the baked yacht.
We can’t wait to see the final result!
